[Not going to touch with a four meter extender arm the fact that they're both right: even milk from the same bantha flock could alter in color depending on age of the milk, fresh vs fermented, whether it was frozen for transport and which method, season of collection re: diet of the animals, if anything was mixed with it, and that some planets would indeed alter its shade just as Kay and Jyn were doing regardless of it starting as either white or blue. The difference in their perception was that Jyn had seen the stuff local and Kay, imported.
…Which probably would default to Jyn winning in terms of natural state. But Kay's measurements from gathered data were also accurate.
