He's going to roast some type of meat in clay. The clay hardens while it's roasting, which is good because it traps the juices inside. It makes the meat very tender. He needs a hammer to crack the clay open afterwards; it makes a theatrical dinner. And he must be making a dairy-heavy side dish.
